Soft white cheeses have common characteristics – white bloomy rind, rich creamy paste,
earthy notes in taste, a little dose of punginess, but their individual flavours may vary from
batch to batch – depending on weather, cows’ diet, temperature fluctuations as much as
2*C in cheese cave and even cheese master’s mood. This is the beauty of artisan
cheesemaking – each batch has ability to surprise every cheesemonger.

Our brie type cheese BALTEZERS is balanced in flavour, smell, and sweet taste you would
expect from a first-class dairy product. Its rind feels velvet with slight tones of sand, grey,
and with older cheeses – reddening edges. It is best at 3-4 weeks of ripening still with barely
ripened “hart” in the centre of cheese.
