well perceptible taste of buttermilk. The rind is naturally developed by washing with brine
solution (or Black balsam) every day during first month of aging providing haracteristic long
enduring ' real cheese ' aftertaste.
Small wheels ripen faster and develop harder paste, thus are very popular among hard
cheese lovers.
Perfect cheese for cheese plates, and as snack cheese.
